1. Denver’s Smallest Brewery - Wit’s End

    Tucked back in a nondescript business park in West Denver lies an impossibly small brewery that goes by the name of Wit’s End.  Owner/Head Brewery Scott Witsoe opened Wit’s End in September of 2011 on a 1bbl system - not a great deal bigger than some homebrew setups.  But that hasn’t stopped Scott from brewing some seriously good beers and pedaling them around town to a select few accounts.  How is he doing it?  He’s working his ass off.

    Yes, this is the brewhouse of Wit’s End.  Yes, Scott admits he spends many long days brewing in order to keep up with demand while keeping 6-7 beers on tap in the tap room (and supplying accounts like Denver Bicycle Cafe, Rackhouse Pub, and more).  While this extremely “hands-on” system doesn’t allow for any naps during the boil, Scott says he’s gotten extremely comfortable with it since they opened 10 months ago.  While he is still pumping his beer into his 2 1bbl fermenters, he will soon have 2 3bbl tanks online that he managed to haul away from Strange Brewing Company.

    Here’s a look at Wit’s End Brewing Company’s core lineup:

    • Jean-Claude Van Blond - Belgian yeast fermented blond ale featuring a light malt profile and oats
    • Super FL I.P.A. - Black IPA that features nine different malts with Columbus and Cascade hops, dry-hopped, and aged on cedar chips
    • Green Male Ale - an extremely hoppy IPA with Pacific Northwest influences
    • Kitchen Sink - Porter with additions of rye and smoked malt
    • Wilford - Belgian Oatmeal IPA

    If you haven’t visited Wit’s End yet, you need to fix that.  They will also be pouring at the Denver Summer Brew Fest on July 27th at Mile High Station so you can try them there as well.
